Sugar-Free Banana Bread

This no-sugar thing is not for sissies.

I'm on day three and I'm already struggling. I had no idea how many foods had sugar in them! It's incredibly frustrating. It seems like every label I read has sugar way up high on the ingredient list. Every single whole wheat/whole grain bread variety I checked out at the store today had sugar in them. Guess I'll be making my own bread this week!

Tonight I was craving something sweet like you-would-not-even-believe, so I decided to make good use of the half-rotten bananas sitting on my counter.

I just improvised the recipe, but it actually turned out really great. Not only did these muffins satisfy my sweet tooth, I have plenty left for breakfast tomorrow and another dozen to freeze for later.

Sugar-free Banana Bread (or muffins!)

4 medium over ripe bananas - mashed
2 eggs
1/3 cup vegetable oil
1/3 cup honey
1/2 cup milk
1 1/2 cups whole wheat flour
1 cup all purpose flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon


Mix eggs, oil, honey, milk and bananas in a large bowl. Add the rest of the ingredients and blend. Butter two loaf pans and bake at 350 for 35-40 minutes. Muffins only need about 15 minutes. Slather with butter and enjoy!

  2. Thanks for the recipe! I too am cutting the sugar out. It is getting easier every day. But a muffin would be a nice treat! I'm ok with honey, it's unrefined white stuff that irks me.

    I found bread at the store yesterday, I was shocked, a wholegrain baguette with NO sugar in the list. It's nice and it was the last one..I grabbed that sucker so fast!

    I found that some whole grain bread helped with the cravings a lot!

    Keep going..I'm on day 6 or 7 and it does get easier!

  4. That looks and sounds delicious! I know, giving up sugar was incredibly hard for me. And even now, realizing that I've been eating too many natural sweeteners - it's really tough to go without. I wish you well!

    I love this recipe! I also love this idea of body before baby. (I think that is what it is called.) Sugar is my achillies heel right now. I don't have trouble exercising, just with eating.

  7. I love your blog. Very helpful, very fun. I am currently avoiding sugar, wheat, soy, onions and I am severly allergic to egg whites. I am an avid cook and really have to get creative, especially if I want to be able to enjoy some things that the rest of the world can. I have discovered Agave nectar as a delicious sweetner, of course... honey and pure maple syrup. Also... Stevia and Zylitol. Keep up the good work. I am getting ready to follow you on Twitter too.

  9. Hmm...I was thinking that if I tried to go w/out sugar, I'd have to go without honey, too. If I can have a tiny bit of honey, I might be able to do this sugar-less thing....
